Fall is trying to make it’s way into Fresno this week, it will be dipping it’s toes into the cool temperatures today so  we wanted to celebrate Falls’ arrival by making these Delicious Red Apple Puff Pastry Rosettes with Cinnamon Sugar.

Ingredients:

Apple Filling
2- Red Apples, Sliced thin
1 TBS- Cinnamon Sugar
1/2 Cup Water

1 Tbs lemon juice

1 egg- beaten for egg wash

Puff Pastry
1 Sheet Frozen Puff Pastry-thawed
or
1 Cup All-Purpose Flour
1/4 tsp- Salt
10 Tbs High Quality Butter
1/3 cup Water

  1. Pastry- If you are making from scratch. Blend together Flour, salt, butter and cold water with pastry cutter.
  2. Shape the dough into a square. You should be able to see pieces of the butter in the dough.
  3. With a floured rolling pin, roll the dough out into a long rectangle. Fold the rectangle like a letter (3 fold) , turn the dough a quarter turn
  4. Repeat at least 5 times. As you repeat the dough will become easier to work with.
  5. Once you’ve repeated enough. Wrap the dough in plastic wrap and refrigerate at least one hour.
  6. After the dough has chilled, roll dough out into a rectangle and cut into 6 12inch x 2.5 inch strips.
  7. Preheat oven to 350
  8. Filling- Place apple slices in a microwaveable dish. Add water and lemon juice.
  9. Microwave apples for about 3 minutes. Just long enough that they are flexible but not mushy.
  10. Drain water and set apples aside to cool
  11. Place 6-7 apple slices at the top half of each dough strip with the peel side up.
  12. Apply egg wash to lower half of dough and sprinkle some cinnamon sugar over the wash.
  13. Fold the lower half of the dough over the apple slices leaving about a half inch of the top of the apples showing.
  14. Starting from the left side, roll the dough from left to right.
  15. Place rose in a greased cupcake pan
  16. Repeat
  17. Bake for 20-25 or until Pastry is baked all the way through

I dusted my roses with powdered sugar and more cinnamon sugar once the roses had cooled down.

Enjoy! Hannah
